Raw Vegan Almond Taco Meat

Today marks the beginning of 31 days of meat free recipes for my “break up with meat” challenge on Instagram! The recipe I’m kicking things off with is a simple yet classic and delicious ground taco beef recipe. 🙂

1 cup raw almonds
1/3 or 1/4 cup oil – use whatever kind you prefer best
2 – 3 tablespoons soy sauce (depending on flavor) *or* use the same amount with umeboshi plum vinegar if you avoid soy products. 🙂
1 teaspoon chili powder/ ground flakes or 1 fresh chili pepper
3 – 5 cloves fresh peeled garlic or 1 tsp garlic powder (judge amount depending on your love of garlic)
1 – 2 tsp onion powder or 1/4 small raw yellow onion (though any color will do)
1 tsp cumin powder
1/8 tsp or pinch of Himalayan sea salt
1/2 tsp oregano or 1 tbsp fresh herb
1/2 tbsp paprika powder

1. Gather all your ingredients!
2. Put the almonds into the food processor* and pulse until they are ground roughly but evenly.


3. Add the spices and other ingredients.
4. Season as desired until perfect to you!
5. Enjoy! Use a collard green as a tortilla, cashew sour cream, tomatoes chopped and pico de gallo… Yum!

Notes: if you don’t own a food processor, that’s okay! You don’t need one. You can use your blender for the same task. You can also chop (specifically mince) the nuts by hand, grind them with a mortar and pestle, or use other tools to get the desired texture. I am fortunate enough to have a food processor so I chose this method but there are many different ways so make sure you try out the recipe! 😉

Mmm- the final concoction with salsa fresca, green onions chopped and topping the burrito, raw-co meat, and heirloom tomatoes! Yay!
